Truebar Inspired Birthday Cake

Today I realized a lot of my friends have February birthdays! (Happy Birthday friends!) Since I live so far away from most of them, I decided I would still celebrate and make a gluten free/dairy free cake that I will enjoy for them : ) (Pretty thoughtful right?) I decided to make a simple chocolate cake using Pamela's chocolate cake mix! Instead of using vegetable oil, I substituted 3/4 cup of  unsweetened applesauce! I also had some raspberries in the fridge and figured I would throw those in as well! I baked the cake as directed on the package and took it out to cool. I wanted to decorate the cake but didn't have any frosting in the house. I remembered reading a blog post about coconut milk frosting (the full fat kind) and was just lucky enough to have some in the refrigerator! I took the can of coconut milk out of the fridge, added 1 teaspoon of raw sugar, and a teaspoon of vanilla and Voila! Of course I used the leftover raspberries to top it off and even used some almonds and chocolate chips! I guess you can say this cake was inspired by my favorite Truebar flavor, Raspberry Chocolate Almond!
