Apple Crisp

Ingredients

  • 5 large apples peeled, cored, and sliced
  • 1/4 cup cashew milk
  • 2 Tbs lemon juice
  • 2 Tbs pure maple syrup
  • 1 Tbs of coconut sugar
  • 2 tsp cinnamon
  • 1/2 tsp allspice

Crumble Topping

  • ½ C almond flour
  • ¼ C coconut flour
  • ¼ C crushed walnuts (optional)
  • 1 Tbs coconut sugar
  • 2 tsp ground cinnamon
  • 3 Tbs melted coconut oil
  • Pinch of Himalayan pink salt
  • ½ C Organic Happy Rolled Oats
  • ½ C Organic Sprouted Maple Quinoa Happy Granola

Directions

  1. Preheat oven to 375-degrees F and grease an 8″ x 8″ baking dish
  2. In a medium bowl, combine apples with cashew milk, lemon juice, maple syrup, coconut sugar, cinnamon, and allspice
  3. In a separate bowl, add all the ingredients for the Crumble Topping and gently mix with your hands. You want the mixture to be consistent but crumbly. Add a small amount more of coconut oil if it seems too dry
  4. Pour the apple mixture into the prepared dish
  5. Using your hands, evenly sprinkle the crumble topping over the apples
  6. Bake for 25 minutes or until apples are tender and can be easily pierced with a fork

Serve warm and enjoy!
