Taking GF Baking for a Test Drive!

With Thanksgiving in just a few days, I thought it might be a good idea to practice a couple of dishes, but most importantly the gluten free bread! I have to be honest, I have never baked gluten free bread before. I have always wanted to, but the thought kind of terrifies me! So many different flours to use, the measurements have to be exact or your bread could turn out too crumbly, soft, chewy, dry... the list goes on and on. I decided to take a little pressure off and start with a pre-measured mix! I was given a couple Chebe mixes from the wonderful Annie from Annie's GF grub! They sat in my cupboard for a week or two before I mustered up the courage to start mixing. I picked the Focaccia Mix to start with and was excited fairly quickly when the box suggested to add fresh herbs or sliced tomatoes/onions! I picked some basil and tomatoes out of my garden and voila. I was ready to make some gfree focaccia! ( I also added Daiya Shredded Cheddar to make it dairy free as well) For my first try with gluten free bread mix, I thought it was really good! A little bit on the chewier side, but I was worried if I left it in the oven too long, I would have gotten dried out bread! Always room for improvement!
